Tomatoes need a lower pH so that they may be water bath canned. Citric acid naturally lowers the pH without changing the tomato flavor like lemon juice does. This product provides a pantry-ready alternative to lemon juice when canning tomatoes. Citric acid is called for in 90% of USDA tomato recipes.

Rated 5 out of 5 by from good product for safe canning I have been using this for several years and find if used as directed in low acid tomatoes it works great without bitterness or changing the flavor of the product. In higher acid tomatoes I use 1/2 the amount just for insurance. Watch out ! some old heirlooms are low acid and need either lemon juice or citric acid to be safe and to preserve color and flavor. If you can with a lot of seeds or bits of skin in the jar it may effect flavor and bitterness may be present. Some pesticides and coatings applied to store bought fruits do not easily wash off! Use this product with confidence knowing you are canning safe food to eat and this product has little or no effect on flavor.

Rated 5 out of 5 by from Excellent!! I used this in my spaghetti sauce instead of lemon juice, and the sauce tasted like normal when I opened my cans to cook. Did not change the flavor and was quick and easy. LOVE!

Rated 1 out of 5 by from Yuk !! Over the years, canning guidelines change and recently Ball started promulgating the use of citric acid when canning tomatoes. I thought it best to go ahead and use it (better safe than sorry) and what a mistake!!! I have HUNDREDS of jars of tomato products that taste bitter. I have made dinners with some tomatoes and even after adding sugar, it simply wasn't edible. I will stick with heirloom tomatoes that have the old fashioned acid values and omit the citric acid in the future!!
