Rated 4 out of 5 by from Easy, but Limited I have used my FreshTech canner for over a year and like the convenience and low heat generated (good in Southern California). As other reviews have noted, the limited recipes are VERY disappointing. Ball has not responded to requests for new recipes, so users are left to try various canning "hacks" in order to use their own recipes. Sometimes, it's obvious that spices will not cause problems, but with other ingredients, safety could be questionable. I've started a table to record the times used in each setting -- warming up with gentle steam, full steam, cooling down. This has show me that the machine spends a lot of time being extra cautious. My jams seem to taste overcooked, pickles were a total loss and mushy. I had best results with tomato sauce as the added heat times only made it better. My favorite use so far is with Italian Tomato Sauce and Chili Sauce (made by adding chili powder and cumin instead of italian spices). Would I recommend this product? Maybe. It gets an A+ for convenience. Maybe if more users ask for new recipes, Ball will offer some new ideas. :>)

Rated 4 out of 5 by from Great for small household I purchased the auto canner one year ago and have processed 106 jars of jams preserves and applesauce in one year. Most was for gifts to friends and family. I trick the unit by puttin cold water in the inner pot to cool it down so I can start a new batch after 10-15 minutes cool down. Perfect for 2 person household. PC

Rated 5 out of 5 by from Wonderful Canner!!! I purchased this about a month ago and was skeptical at first. However after making 3 batches of strawberry jam and 1 batch of blueberry jam, I am sold on this new little invention by Ball. So far, I have had ALL my jars to seal perfectly! It is super easy to operate and gives you easy step-by-step instructions on how to use it, and a recipe booklet in addition to the 'extra' recipes found on Ball's website exclusively for the canner. It is perfect for a beginner like me who just likes to stock moderately for my own little family, as it does only small batches at a time; however, plenty enough for my family and even relatives and friends to enjoy. I am currently making jams and jellies for Christmas presents in a basket with gingerbread men and a fresh loaf of bread. This item is not a pressure cooker, it is only for high acidic foods like pickles, sauces, jams, jellies, and tomatoes etc. I really do hope that Ball will invent a canner (like this one) in the future for pressure cooking the low acidic foods. In the meantime, I am having so much fun with this canner!

Rated 1 out of 5 by from Not a pressure canner? I was so excited to see Ball had come out with a "pressure canner". However, upo review, I see it is only for water bath items. I need an electric pressure CANNER so when I make big pot of soup or stew or other items with meat, I can put the leftovers in pint jars and can them for later meals, without having to drag out my 21 qt canner and watch it. It would be nice to have an electric Pressure Canner that you could load, set the timer and walk away from until it's done. Ball, can you make one of those?? Thanks.

Rated 5 out of 5 by from Great Canning Tool! I scored this on a super discount at a local overstock store and couldn't wait to try it out. In short...... The Canner - The unit works great and is easy to use and clean. It cans amazingly well and requires no supervision like needed with a traditional pot. Build quality seems great and I haven't experienced any bad batches with it yet. I've done 6 jars so far and all have vacuum sealed. Recipes - So they need more of these however once you get a little experience you can definitely use your own. However I want to tell people now, and check this websites reviews, the BBQ sauce recipe is horrible so save yourself some disappointment. It tastes strange, needed corn starch to thicken etc. Thats a zero star recipe. I did try the Applesauce and it came out amazing with a little fresh nutmeg and cinnamon and I'm excited to try other ones. SUMMARY In short this thing is great and I'm using it paired with my Ball automatic jelly/jam maker. I can't wait to try out additional recipes and store them for later use and gifts for this Christmas.

Rated 2 out of 5 by from the processing times are so long! I don't get it. To preserve simple pickles it takes 34 minutes. How is that a time saver? Plus 12 minutes to pre heat the jars. Thats almost an hour for 6 small jars. Any water bath recipe says 10-15 minutes processing time. It's all vinegar anyways!! And the whole tomatoes packed in their own juices, i.e. canned tomatoes, the time is 104 minutes? WHAT??? Is my machine broken???
