Rated 5 out of 5 by from I love it I have been using this "instant" pectin for years. But the way I use it is different. I do not like to use much sugar with foods. I put fresh strawberries in food processor with a little sugar and instant pectin. It gets thick and can be used for jam or to put on pancakes or waffles. It also freezes well. I was disappointed when I blended it in a homemade raspberry salad dressing and it did not thicken. Perhaps it should not be blended...probably breaks up the molecules too much. Anyway it works great in the food processor.

Rated 1 out of 5 by from Worse pectin ever I bought this pectin since I was out of bulk pectin. I didn't realize that it wasn't the same stuff as my last jar of Ball brand pectin. The labels are too similar. There was NO indication on the label that this pectin could ONLY be used for freezer no cook jam. There was NO indication on the meager recipe instructions that this pectin could ONLY be used for no cook jam. I tried to make a batch of watermelon jelly. Good thing it was a small batch. I ended up with watermelon syrup that won't ever set. WHY couldn't the marketing department have made the difference more prominent on the label? When I'm grocery shopping with the kids I don't have time to ponder if the label information is complete or not. At first glance the jars look the same and this was the only product on the shelf at the store. Marketing really dropped the Ball on this one.

Rated 1 out of 5 by from Failed to set 2x, even after customer service help I've used Ball RealFruit Instant Pectin twice in the past week, and it has failed to set well in either case; I followed the directions exactly both times. I first used it for peach jam, and the jam came out as runny as it was before adding the pectin. I called the Ball customer line for help and was told that this type of pectin won't set if there's too much juice, though this isn't mentioned on the jar's instructions. Yesterday for a batch of organic strawberry jam, I strained the mashed berries to reduce liquid before adding the sugar and pectin. That batch did finally gel up a bit overnight, but it's still too soft for me to call it jam. From now on, I'll stick with the Ball No-Sugar/Low-Sugar Pectin for my freezer jam because that sets up beautifully within minutes *and* uses even less sugar than the instant pectin if you choose.

Rated 1 out of 5 by from Didn't set, won't buy again Found cherries for an unreal deal, made freezer jam (well, not jam). Used freezer jam pectin for the first time, instant type. Won't do that again. What a waste. I will go back to SureGel no/low sugar.

Rated 2 out of 5 by from disappointed with instant pectin by Ball I made blueberry freezer jam using instant pectin....and followed the recipe to the T...after an hour....still not set as I look at it on the counter...also, directions on back of label hard to follow...hard to go on Ball web site for better instructions...unsatisfied...will go back to regular pectin/surgel

Rated 5 out of 5 by from Freezer jam--A win-win! I have used Ball's 30 min. Freezer Jam Instant Pectin for over 5 years. The jam tastes like fresh fruit and uses less sugar--1 cup to 4 cups of berries...terrific for those of us with issues with sugar. Yes, it's softer than cooked jams but so what--better taste with less sugar is more important. It's great on toast and pancakes and biscuits and on crackers and cheese...oh my, I could go on all day but as I said I have a sugar issue so I limit myself; however, I gift my family with it every year and they find it wonderful too! (Did I tell you how great it is on chocolate cake or ice-cream?

Rated 4 out of 5 by from Tried twice to make red raspberry seedless jam I tried this last year in 2016 and now in 2017 thinking that maybe I did something wrong, but the jam is still runny. Any tips to make it thick the way it should be would be great. This site only has items for sale. I've made strawberry jam with it and enjoy the flavor especially since you don't need so much sugar as in the pectin that needs boiling.

Rated 5 out of 5 by from I've used it since it came on the market I'm not understanding other reviews that say directions/recipes aren't included. On the jar, there are instructions to peel away the front label and there they are. I also reference the website if I'm using a fruit I haven't used before. I love the results and have used it with sugar alone, sugar substitute alone and a combo of the two.
