Preserving Method: Water Bath Canning

  1. SPRINKLE pectin evenly over bottom of Pot fitted with Stirrer.
  2. ADD carrots, pears, pineapple with juice, lemon juice, cinnamon, nutmeg, and cloves evenly over pectin.  Add butter/margarine to help reduce foaming.
  3. PRESS jam button; cook time will automatically default to 21 minutes.  Press enter.
  4. WAIT 4 minutes for appliance to sound 4 short beeps; add sugar gradually while Stirrer continues running.  Place glass Lid on Pot.
  5. APPLIANCE continues to stir your ingredients while it cooks. Stay within earshot of appliance; when it beeps again at the end of the process, jam is complete.
  6. PRESS cancel, unplug appliance; immediately remove glass Lid. Remove Stirrer using a pot holder. Skim foam, if necessary from top of jar.
  7. PRESERVE jam immediately, using 1 of the 3 ways listed here

Rated 2 out of 5 by from Whoa! Waaay to sweet-even after reducing sugar- and the clove (also reduced) overpowers ALL the other flavors. Doesn't taste like carrot cake to me.

Rated 5 out of 5 by from Actually Tastes Like Carrot Cake!!! I recently purchased the two Ball Canning Cookbooks, and one of them had the original version of this recipe. A YouTube channel recommended periodically checking back with this website to see if there are updates to recipes in the books; in doing so, I learned three things: 1.). Original recipe had too much sugar; 2.). There was a version created for the Jam and Jelly Maker that used less sugar; and, 3.). It has become a favorite recipe for many users. It was with the aforementioned in mind that I skeptically, yet hopefully, used this specific recipe (for the Jam and Jelly Maker). I loved it: from project start to completion, as well as taste testing and gift-giving, this recipe instantly became a family favorite. Highly recommended!

Rated 5 out of 5 by from Looking for a new way to use carrots? I gave a bunch of this away last Christmas. Everyone loved it and asked for the recipe. My son ate it all the time on his sandwiches for lunch. This was an easy recipe and delicious.
