Strawberry Freezer Jam - Classic Pectin

Preserving Method: Freezing

  1. COMBINE prepared fruit* with lemon juice in a large bowl. Add sugar, mixing thoroughly. Let stand 10 minutes.
  2. COMBINE water and Ball® RealFruit™ Classic Pectin in a small saucepan. Bring to a full rolling boil that cannot be stirred down, stirring constantly. Boil hard for 1 minute, continuing to stir.
  3. ADD cooked pectin mixture to fruit mixture stir for 3 minutes.
  4. LADLE freezer jam into clean Ball® freezer jars leaving 1/2 inch headspace. Apply caps and let jam stand in refrigerator until set, but no longer than 24 hours. Serve immediately, refrigerate up to 3 weeks or freeze up to 1 year
*To Prepare Strawberries: Hull and crush one layer at a time using a potato masher.

Rated 1 out of 5 by from Terrible results I picked 2 pnunds of strawberry. I saw the recipe in Facebook and decided to try the freezer strawberry jam with the instant pectin. Well, did I ever make a mistake not doing jam as I have for over 50 years. It is noting but runny. Nice color but always had nice color to my jam. also this product was very pricey compared to Surejel..

Rated 1 out of 5 by from Shouldn't be used for freezer jam I bought the Classic Pectin because my store didn't have enough Certo or SureJell. What a mistake! It turned brown while cooking and then formed sheets of jell in my strawberry mixture. I tried to pull them out and then used my mixer to try to combine it better. I don't see how it will set up after having to pull that gunk out

Rated 4 out of 5 by from Try Instant Pectin I prefer to make freezer jam. It's faster and strawberries keep their bright color. Be sure to buy the Instant Pectin. The regular won't work. Jam ends up a little soft but spreadable. Certainly not as thick as Smucker's but the taste of homemade jam is the best. Find recipe on Instant Pectin label on the inside. I used 1/3 c sugar instead of 2/3. De-lish!

Rated 1 out of 5 by from Absolutely Shameful - doesn't even deserve 1 star I had no choice but to use this as it is the only option in my grocery store. I am utterly disgusted. I have been making strawberry freezer jam for 20 years with Sure Jel and have never had such poor results. The pectin turned brown as soon as it was mixed with water, and I agree with other reviewer that the pectin set in a weird way - sort of like sheets of solidified jam. I have a separation of liquid on the bottom. Very disappointing, Ball. I'll stick to just the jars and lids next time. Actually, I'd rather have nasty store-bought jam than take a risk again.

Rated 1 out of 5 by from Sad! Trying to save what I made... I typically use a different brand but this year I used Ball and my strawberry freezer jam didn't set! It's very frustrating that I will have to purchase more pectin and do the whole process again to save what I have made. However, I will not be purchasing more Ball brand pectin. I had read the reviews after I already purchased the pectin, I was really hoping that my jam would turn out and it didn't! I foolishly trusted that mine would turn out and I used all the fruit and pectin that I had.
