Preserving Method: Water Bath Canning

  1. RINSE strawberries in cool water and drain thoroughly. Remove stems and hulls. Cut strawberries in half. 
  2. WORKING in batches, puree strawberries in a blender or food processor fitted with a metal blade until smooth.  Measure 3-1/2 cups puree.
  3. ADD strawberry puree evenly into Pot.  Pour lemon juice evenly over puree.  Pour sugar evenly over strawberry mixture.
  4. PRESS jam  button. Cook time will automatically default to 21 minutes.  Press (-) to reduce time to 18 minutes. Press enter.
  5. IGNORE 4 minute beep. Do NOT add Glass Lid.  
  6. WAIT for final beep when process is complete.  Press cancel  and unplug appliance. Remove Stirrer using a pot holder.
  7. PRESERVE concentrate using 1 of the 3 ways listed here.
