Apricot-Honey Mustard Glazed Chicken


Preserving Method:

  1. COMBINE sugar and vinegar in a small saucepan.  Bring mixture to a boil over medium heat.  Remove from heat.  Add apricot preserves, mustard, 1 teaspoon salt and wine, stirring to blend well. To Use Skewers-Soak skewers in water for 30 minutes.  Thread two pieces of chicken onto each skewer.
  2. BRUSH top of chicken with apricot glaze.  Place chicken on grill or under broiler;  cook 6 to 8 minutes.  Turn chicken over and brush with additional glaze. Continue cooking until chicken is thoroughly cooked.  

  1. SERVE Remove chicken to platter.  Serve with remaining apricot glaze.

TIP: Before serving remaining glaze with chicken, bring to a simmer in a small saucepan to reheat before serving.
